Preparation
Add 2 lt. drinking water to 1 kg Crispy Coating Mortar and mix with the help of a whisk until you get a homogenized consistency. Throw the chicken pieces into the prepared slurry and coat them all over. Remove the products from the slurry and panel them with the dry part of the same mixture. Bake the breast 4 minutes, wings 7 minutes, drumstick 10 minutes, thigh 13 minutes in hot oil at 170°C.
